2019
Relaunch of The Glasshouse Bar and Restaurant, the principal bar of The Grove Hotel, with an updated modern concept.
Holy Water was selected to set the tone, curate the offering and atmosphere as well as provide consultancy for operations, staff training and supply chain.
After foraging the grounds and exploring the famed Walled Garden of the hotel we created The Garden to Glass concept to form the ethos for the whole project.
The cocktail list was created based on sustainable homegrown leaves, berries and fruits. It provided the bar team inspiration to get creative with the produce and work with the gardeners. Now the menu became unique, owned by the team and true to The Grove.
